The gastronomy of Bilbao deserves a special mention. Its delicious food and excellent regional drinks, such as txakolí (white wine produced, mainly, in the districts of Deusto and Begoña), make the city an attractive place. Bilbao’s gastronomy is based on products from the sea and the estuary, such as eels and cod, being the latter a product of vital importance during the shortage experienced during the first Carlist siege. The most popular dishes are Cod Pil-Pil, Hake in green sauce, and Txipirones (Squid) in their ink.
